Black Olive Caviar Bites
This is something you can serve when you have vegetarian guests and you want to impress them by not offering carrot sticks and ranch dressing for an appetizer.
These black olive caviar bites are a riff on an appetizer I ate over 20 years ago that consisted of table water crackers topped with minced onions, chopped boiled eggs and caviar. I was horrified by the caviar at the time, but the saltiness complimented the eggs so nicely I managed not to gag at the thought of eating caviar and now I love it.
The same goes for the black olives here, they compliment the boiled eggs and the sour cream provides a creamy backdrop. Serve the spoons with a side of crackers for a light crunch or layer the ingredients on crackers if you don’t have enough serving spoons.

BLACK OLIVE CAVIAR BITES
Makes 8 regular sized spoons
One 2oz can sliced black olives, drained and chopped
1 Tablespoon minced fresh basil
2 teaspoons balsamic vinegar
1 teaspoon extra-virgin olive oil
1 clove garlic, minced
1/8 teaspoon red pepper flakes
1/8 teaspoon ground pepper
1 hard cooked egg, peeled and finely chopped
1/4 cup reduced-fat sour cream
salt and pepper to taste
In a small bowl, stir together black olives and next 6 ingredients.
Starting with the handle end of each spoon (if using), arrange crème fraîche, crumbled egg and caviar in thirds (see photo). Serve on a tray with and glass or container for the empty spoons.
