Egg in a Zucchini Nest
This is the perfect quick-and-easy breakfast dish for one person. When your morning schedules collide or others in your house choose waffles and syrup when you’re trying to eat healthy, or you are starving after your morning exercise routine, this lovely and healthy dish is for you.
This dish comes together quickly thanks to the spiralizer, but if all you have is a box grater and you don’t want another kitchen tool (that you will use on all the things because you will fall in love with it), grate the zucchini, instead. You can sub any squash, a sweet potato or a combination of both if you like. The point is to get in your healthy veggies and protein before your start your day.
EGG IN A ZUCCHINI NEST
Over medium heat, heat oil in a small non-stick skillet or cast iron pan. Add garlic and pepper flakes (do not inhale over the pan, you will cough!) and cook 30 seconds, stirring occasionally to prevent scorching.
Add zucchini, tomatoes, salt and pepper and cook, stirring often, 2-3 minutes.
Create a well in the center of the vegetable mixture and carefully crack the egg into the well. Cook, uncovered, until whites are set and yolk is done to your preference (3-4 minutes for me).
Serve in the pan garnished with cheese and basil.
1 teaspoon olive oil
2 clove garlic, minced
1 pinch red pepper flakes
1 small zucchini, spiralized or grated
1 /2 cup grape tomatoes, halved
salt and pepper (a pinch each)
1 Tablespoon feta cheese, crumbled
1 teaspoons dried basil
